Can you fry or sauté in an XLite Pot?

In short, best not to. Cooking with oil results in temperatures than can damage the bond between base and sidewalls. Better to stick with water based cooking.

Can you use an XLite Pot on a 2-burner stove?

You can - providing you keep the flame pattern inside the ring printed on the base of the pot. Also, the space next to the windshield is a hot spot. Use a lower heat setting.
